Gina Lettiere, a sustainability specialist at Loyola University, advised students who wanted to look at an environmental issue with local to global implications. The first class was offered in 2009. Students work in groups and take on an issue, and one group started Loyola’s Farmers Market to promote awareness about food systems, where food comes from and making sure money goes back to local growers.
